One thing that helped us with a rescue dog was keeping the first week really quiet and boring, so they could settle without too many new faces. A snuffle mat or a ball they can chase at home also gives them something to do so they don't get stressed. Good luck with Honey, she sounds like she's already coming out of her shell.
